COMPETITION CHICKEN!

 

This is a 3 step bbq chicken recipe..and worth the work trust me!!!

 

First use chicken thighs….

 

Step 1 – the rub

 

1 tablespoon   kosher salt

1 tablespoon brown sugar

1 tablespoon smoked paprika

1 teaspoon of black pepper

1teaspoon of white pepper

And  ¾ of a teaspoon of granulated garlic

Mix and reserve 4 teaspoons of that rub for later

The rest cover chicken thigh’s in a tinfoil disposable deep pan

 

Let rest in fridge for an hour at least

 

Step 2 – braising liquid for chicken

 

Half cup of chicken broth

Half cup of your favorite bbq sauce

6 cloves of slicked garlic

3 tablespoons of worcestershire sauce

2 tablespoons of hot sauce

 

Step 3 – glaze

 

2 table spoons of apple jelly

2 table spoons of bbq sauce

1 table spoon brown sugar

1 table spoon hot sauce

And once minced clove of garlic

 

Now pour braising liquid over chicken cook indirectly in bbq at about 275 to 300 for about ¾ of an hour

Now you can also do the wood chip smoking technique with wet chips and tinfoil for a hint of smoke..google wood chip smoking if your not sure of the method

 

Then take chicken out of the braising pan…place again on side off bbq with not heat cooking indirectly

Add with brush half the glaze …and then sprinkle the 4 teaspoons of rub you reserved on top… cook another 15 mins or so

Add the remaining glaze….on the chicken…..cook another 20 to 25 mins… until chicken is done and as a beautiful shellac of glaze!

 

This is the best bbq chicken I’ve ever had!!!!
