KEVIN’S FAVOURITE MARINADE!

 

Ingredients

  • 1 cup olive oil
  • 3/4 cup plus 2 tablespoons fresh lime juice
  • 3/4 cup orange juice
  • 1/2 cup chopped fresh cilantro
  • 8 garlic cloves, minced
  • 1 tablespoon grated orange peel
  • 1 tablespoon dried oregano
  • 2 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons ground black pepper
  • Place all ingredients in blender until smooth

 

When doing chicken only use thighs and legs I find breast meat cooks to fast and tends to be dry…

Marinate in a zip lock bag turning on occasion for at least over night 48 hours for best results.

Cook on bbq under indirect heat at about 350 to 375 until done and crispy

Or in oven at 350 turning occasionally until crispy.

Great also on a pork butt!!!!
