BEST FISH BATTER…EVER!

 

Now there are only two kinds of fish anyone should ever batter as far as I’m concerned

 

One …cod….and if you want the best…it will cost ya..but halibut!

 

Now first take your fish..cut into equal size portions salt and peper both sides.

 

Now the batter…

 

1 cup of all purpose flour

1 cup of corn starch

1 and a half teaspoons of salt

For lift one teaspoon of baking powder

Add one and a half cups of beer… don’t cheap out use a good quality beer it adds a lot of flavor

Whisk until smooth

Cover with plastic wrap place in fridge with fish

 

Now In preferably a cast iron pot…” retains heat best” heat 6 cups of peanut oil to 375 degrees

 

Fetch batter and fish..place all fish in batter and in small batches cook fish 4 mins exactly a side

 

Place on rack and finish with salt..

 

Serve with salad or fries… you’ll love this recipe
