Ok, this is a little trick I came up with when making one of all time favourite’s…schnitzel !!

Use what ever meat you like. For chicken use boneless skinless thighs (don’t use white meat though…no flavour), beef or pork or veal. Best has to be veal and pork though.

Usual steps: pound out meat thin, salt and pepper both sides, then dredge in flour. Egg wash…and now…here is what I came up with…

For the final coating before you fry in a large good frying pan in grape seed oil, take…are you ready…panko crumbs with salt and pepper (you can also at this point add some fresh herbs if you like..like rosemary or dill, however I usually just like salt and pepper). But now the final ingredient…take those french’s deep fried onions and put them in a zip lock bag. Pound them into crumbs, add to panko, and fry until golden brown!!! So good!!!!
